This is an extremely popular baking recipe from our book, Leaner, Fitter, Stronger: Chocolate Coconut Cookies!
Ingredients (makes 12 cookies):
- 130g rolled oats
- 75g coconut oil
- 1 egg
- 4 tablespoons of honey
- 30g cocoa powder
- 25g desiccated coconut
- 50g chocolate chips (optional)
Recipe:
- Preheat the oven to 190C/Gas 5 and line a baking sheet with baking parchment.
- Put the oats in a food processor and process to grind them down to a flour. Add all the remaining ingredients, except the chocolate drops, to the food processor and blitz until well combined. Remove the blade and stir in the chocolate chips, if using.
- Form the dough into 12 balls by rolling portions between your palms. Place the balls on the prepared baking sheet and press down on each to form a round about 5mm thick. Bake in the oven for 15 mins, until crisp on top but still a little gooey in the middle. Allow to cool on the baking sheet before serving.
